September 14- A Clean (Eating) Start-Garden Frittata and Banana Pancakes

I am blessed to still be close with my high school girlfriends. Through the years we've attended different colleges, each met our husbands, started new careers, and have lived in different cities, yet somehow we've not only remained good friends but have grown even closer with age. (Our husbands hit it off and actually like to hang out with each other too...What more could you ask for?)

Despite the distance and crazy schedules, we try really hard to meet up a few times a year to catch up and do something fun. This weekend we had an old-fashioned sleepover at my friend Turell's house while her husband was away. (Complete with ice cream, chick-flick television, and giggles. You're never too old.)

This morning we started the day off right with a delicious, healthy clean-eating breakfast.  So good!

These recipes come from the kitchen of Miss Turell Lynn, blogged with permission. 


Garden Frittata
Tomatoes, diced
Onions, diced
Spinach
Eggs (Today we used 8 egg whites and 2 full eggs, which made about 4-6 servings)
Cheese (optional)

1. Saute tomatoes and onions in a nonstick skillet. Toward the end, add spinach to wilt.
2. Whisk eggs and egg whites in a bowl and pour half of the mixture into a nonstick baking dish.
3. Add the vegetables (and cheese if desired) to the pan and add the rest of the egg mixture.
4. Bake on 350 about 15-20 minutes.

Simply Banana Pancakes
Bananas
Eggs
(1 banana, per every two eggs.)

1. Blend bananas and eggs in a food processor or blender until smooth.
2. Pour mixture in small batches onto a griddle or skillet, coated with cooking spray. Cook as you would pancakes, flipping when the bottom side is almost done.

August 14- Banana Mocha Oatmeal

Despite the plethora of dinner recipes on this blog, breakfast is my favorite meal of the day.
I love breakfast. I mean really, truly love it. 

If I had to choose between two scenarios: 
A. Sleep in an extra 30 minutes in my cozy bed...
OR 
B. Spend that 30 minutes enjoying a delicious breakfast while catching up on the news...
 I'd pick B. Hands down. 

Old-fashioned oatmeal is my breakfast of choice. It's warm, filling, healthy, and you can dress it up however you like. Below is one of my favorite, filling, post-workout friendly oatmeal combos. Enjoy!
Banana Mocha Oatmeal
1/2 cup old-fashioned oats
1/2 scoop chocolate protein powder
1/4 large banana, mashed
1 spoon instant coffee
cocoa-roast almonds, crushed (amount as desired)

1. Mix oats, protein powder, and instant coffee in a bowl. Add 1-1.5 cups water, depending on desired consistency.
2. Microwave oatmeal as directed.
3. When 30 seconds cooking time remains, remove oatmeal from microwave and add mashed banana and almonds. Mix thoroughly.
4. Continue cooking additional 30 seconds.
5. Enjoy and be filled with goodness.

December 24-Christmas Morning Cinnamuffins

I love Christmas traditions. As a newlywed couple, we are all about starting our own family traditions and making Christmas memories together. For our second married Christmas, I decided to surprise my husband with breakfast. 
Although breakfast turned out splendidly, the surprise part didn't pan out so well. I'm bad at surprises and he is too smart to fool. 
Regardless, memories were made this morning as we dined on breakfast burritos, hashed browns, pumpkin spice coffee, and mini cinnamuffins. 

Merry Christmas from our family to yours!


Mini Cinnamuffins
1 cup white sugar or Splenda (divided)
1/2 cup margarine, melted (divided)
3/4 teaspoon ground nutmeg (I didn't have nutmeg, so I substituted pumpkin pie spice)
1/2 cup milk
1 tsp baking powder
1 cup all-purpose flour
1 tsp ground cinnamon

1. Preheat oven to 375. Grease cupcake pan.
2. Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg/pumpkin pie spice in a large bowl. Stir in the milk, flour, and baking power. Mix thoroughly. 
3. Divide the mixture into the cupcake pan and bake 15-20 minutes, until muffins are golden. 
4. Meanwhile, mix 1/4 cup melted margarine, 1/2 cup sugar, and 1tsp cinnamon in a bowl. 
5. Remove muffins from pan and roll in the cinnamon-sugar butter. For a festive touch, top with a few Christmas sprinkles. Allow muffins to cool and serve.

June 30- Peanut Butter Banana Oatmeal Bake

Where would my inspiration be without Pinterest? 
Granted, my photos weren't as beautiful, but the result was delicious despite the ho-hum appearance. 

Peanut Butter Banana Oatmeal Bake
Original Recipe by Gingerbread Bagels
1 1/2 cup oats
1/4 cup brown sugar
1 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla extract
1/2 cup milk
1 egg, lightly beaten
1/4 cup peanut butter
1 large banana, mashed

1. In a large bowl, mix oats, brown sugar, baking powder, salt, and cinnamon. 
2. Add vanilla, milk, and egg to mixture and stir through. 
3. Add peanut butter and banana. Mix.
4. Spread into an 8x8 cake pan and bake at 350 for 20 minutes. To my surprise, I don't own an 8x8 square pan. I used a round cake pan and a small glass dish for baking.

You can't go wrong when peanut butter is involved.

June 1- Cherry Berry Summer Smoothie

Once June rolls around, I finally feel like I can celebrate the arrival of summer. Nothing says summer like a light, refreshing fruit smoothie.

My dad got me hooked on smoothies when I was about five or so. When my mom would work late, I used to beg him to make chocolate-banana frappes and perform a puppet show (Who could resist those little puppy dog eyes?). Ever since I was old enough to operate a blender, I started to experiment with different frappe combinations. Every blend seems to turn out different...It's always a surprise.

Tonight I was inspired by blazing heat and produce sales. What a delicious and refreshing way to welcome the month of June.
Cherry Berry Summer Smoothie
1/2 cup almond milk
1/2 cup orange juice
1/4 cup nonfat cottage cheese
4 strawberries
8 fresh cherries, pitted
5-6 ice cubes
1 tsp vanilla

Blend, pour, enjoy.

February 9- Kristin's Roasted Vegetable Scramble

Kristin's Roasted Vegetable Scramble
1/2 Cup Egg Whites
Fire Roasted Tomatoes (about 5-7 pcs)
1/2 Cup Baby Spinach
1 Large Mushroom, Chopped
Chunky Salsa (as desired)
Dried Onion
Oregano

Lightly spray skillet with cooking spray. Sautee mushrooms and tomatoes, with spices. Add spinach and heat until wilted. Add egg whites. Top with salsa and serve with toast, english muffin, or preferred bread. 

Mmm...

February 7- Lazy Chip Cookies

Disclaimer: NOT for supper (unless you have a case of the rainy Mondays...I won't tell)

This is so simple it may not even be worth sharing, but they tasted pretty darn good. Cookies in less than 20 minutes, including prep time. Cookie mix + whatever ingredients you can find (tonight's concoction is brought to you by butterscotch chips and chocolate pieces).

I hope my youth group gals like cookies!

Tomorrow's recipe: slow-cooker enchilada soup. If you don't hear from me, it means I failed. Ha!
